Gluten free baked doughnuts

I have finally got round to making some gluten free baked doughnuts. I will in the near future create some traditional fried doughnuts but I was looking for a slightly more healthier version and here they are.

The dough is very easy to make and is a simple vanilla flavoured dough. You could add cinnamon or even pipe in some jam or Nutella. As you can see from the photo, I have glazed mine differently. I have included the different toppings below.

Top tip

If using sprinkles, make sure they are gluten free. Some contain wheat.

You will need a doughnut mould and I used these silicon ones, found on . (Link not affiliated).

The toppings

I will leave the sprinkles to you to decide on but for the icing I made this:

Iced doughnuts 

172g Icing sugar
2 tbsp Milk (can use a dairy free version)
1 1/2 tsp of vanilla extract

Whisk together the above ingredients. You will be left with a white icing. I then put equal amounts of icing into three bowls. For the chocolate icing, I sieved and stirred in 4 tbsp of cocoa powder. For the pink, I added a drop of liquid food colouring and stirred in.

Sugared doughnuts

3 tbsp of melted butter (dairy alternative can be used).
6 tbsp of granulated sugar

Melt the butter and coat the doughnuts with the butter using a pastry brush. Dip doughnuts into sugar and allow to dry.

FAQs

Can these be made vegan?

Yes, swap any dairy and eggs for your preferred choice. They work quite well with dairy alternatives.

Can I freeze them?

You can freeze the doughnuts before icing. They will keep for a month stored in the freezer.

Ingredients
  

  • 120 g Gluten free self raising flour
  • 1 tsp Gluten free baking powder
  • 75 g Caster sugar
  • 130 ml Milk (can use dairy free alternative)
  • 25 ml Rape seed oil
  • 1 Free range egg (large) You use vegan alternative.
  • 1 tsp Vanilla extract

Instructions
 

  • Preheat the oven to 180'C / Fan 160'C / Gas 4 and grease two 6-hole doughnut trays.
  • Put all the dry ingredients into a large mixing bowl and stir in to combine.
  • Place all wet ingredients into another mixing bowl and whisk until combined.
  • Make a well in the flour mix and pour in the wet mix. Whisk until lumps are removed.
  • Ladle into the moulds. About 3 tbsp a mould. Bake and allow to cool before icing.
