Gluten-free chocolate loaf cake

I just love chocolate cake, whether it is in a loaf form like this or in the type of my ultimate gluten-free chocolate cake. I simply enjoy every single mouthful but I do try to stick to special occasions. What I love about this gluten-free chocolate loaf cake, is the simplicity to make it but the flavour impact. It is big on chocolate without being too rich.

This recipe is fun for all to make from young children to old and how you decorate it is your choice. For the photo, I have gone for mini eggs as it is Easter, at the time of publishing.

Does this recipe contain nuts?
Yes it does contain ground almonds but you can substitute these with more flour.

Can I make this vegan?

Yes, use vegan chocolate, dairy free butter, milk and your preferred egg substitute.

Can I freeze the cake?

I would freeze it before decorating. It will last up to 3 months.

How can I store the cake?

In an airtight tin for a few days.

Top tip

Instead of using chocolate chips, use a good brand chocolate bar and cut it up into chunks. The quality comes through in the bake.

Ingredients
  

For the cake

  • 175 g Soft unsalted butter
  • 175 g Caster sugar
  • 3 Large Free range eggs
  • 130 g Gluten-free self raising flour
  • 1/2 tsp Gluten-free baking powder
  • 1/4 tsp Xanthan gum
  • 30 g Coco Powder
  • 85 g Ground almonds
  • 100 ml Milk
  • 100 g Chopped dark chocolate

For the icing

  • 1 Tub of ready made chocolate butter icing Check the ingredients.

Instructions
 

  • Preheat your oven to 160C Fan / 180C. Add a loaf tin liner to the baking tin.
  • Cream together the butter and sugar for 5 minutes. Beat in the eggs one at a time. Add the flour, Xanthan gum, baking powder, coco powder and milk. Beat until combined. Now fold in the chocolate chunks.
  • Add to the liner and bake for 1 hour or until cooked. Allow to fully cool before adding icing and decorating.
