Gluten free plum squares

This delicious and fun to make recipe is perfect for all the family to get involved with. An Autumn treat in my household the almond flavour meets a crisp base. They store for a few days in a tight tin and a great way to use up any leftover plums.

Allergy advice

The recipe includes ground almonds. You can remove these and add an extra 100g of flour. To make it dairy free, use a dairy free spread use a vegan sour cream or Oatly fraiche.

Gluten free plum squares

Ingredients
  

  • 200 g Gluten free self raising flour
  • 100 g Ground almonds
  • 1 tsp Xanthan gum
  • 150 g Butter or dairy alt
  • 300 g Sour cream or dairy alt
  • 2 large free range eggs
  • 2 Ripe plums stoned and sliced

Instructions
 

  • Preheat oven to 160c (140c fan) and line a 30cm by 20cm deep baking tray.
  • Mix the flour, Xanthan gum and sugar together. Rub in the butter until you have a sandy texture. Put half of the mix into the lined tin and push down until solid. I use the side of a rolling pin for this.
  • With the remaining mix, stir in the sour cream and eggs until combined. Pour into the baking tray over the base. Level out and add the sliced plums. Bake for 35-40 minutes or until golden.
  • Allow to cool in the tin before cutting into squares.
