Gluten free Shortcrust pastry

Why should us folks on a gluten free diet miss out on decent pastry? This pastry recipe is easily adjusted from sweet to savoury. If you want a savoury gluten free shortcrust pastry, remove the sugar and add a pinch of salt, simple! It is short hence the name and a little flaky but so delicious, it is hard to tell that it is gluten free!

Ingredients
  

  • 275 g Gluten free plain flour
  • 1 /12 tsp Xanthan gum
  • 25 g Ground almonds Substitute for flour if you prefer
  • 145 g Cold butter Diced
  • 4 tbsp Caster sugar (if making a savoury pastry use 1/2 tsp of salt instead
  • 2 Large free range eggs beaten

Instructions
 

  • Sieve together the flour and xanthan gum. Now stir in the ground almonds. If making a sweet pastry stir in the sugar or savoury, stir in the salt.
  • Add the butter and rub into the flour until a breadcrumb texture forms.
  • Using a knife, add the beaten eggs and cut it into the flour mixture. Keep doing this until a dough forms. If the pastry is too dry, add a tiny drop of water at a time. If it is too wet, add a bit more flour.
  • Wrap the dough into clingfilm and chill for 30 minutes before using. Cook as per the instructions for your chosen recipe.
