Steak, eggs and crispy potatoes

This is my take on New York steak and eggs but I’m trying to keep it healthy. Traditionally there would be fried onions and peppers but I have opted to season the potatoes with dried herbs. This is a go to meal when I’m wanting extra iron and protein in my diet. In this case, I would of completed a long distance run.

I do not use oil when cooking this but fry light. The egg is fired but by using fry light, it keeps the calories down and the egg more healthy. I also like my steak cooked medium and I have included a guide further down on cooking steaks to your liking. In this recipe I have used a sirloin steak.

Top tip

Make sure your griddle pan is hot when cooking the steak. I also like to put my egg in a cold frying pan and allow it to cook as the pan heats up. This reduces the risk of a burnt egg.

Steak cooking times

  • Blue: 1 min each side.
  • Rare: 1½ mins per side.
  • Medium rare: 2 mins per side.
  • Medium: About 2ÂĽ mins per side.
  • Well-done: 4 minutes each side.

Steak egg and crispy potatoes

Ingredients
  

For the Potatoes

  • 165 g White potatoes Diced
  • 1 tsp Mixed dried herbs
  • 6 Squirts of fry light

For the steak

  • 2 Sirloin steaks
  • 4 Squirts of fry light

For the egg

  • 2 Large free range eggs
  • 2 Squirts of fry light

Instructions
 

For the potatoes

  • Preheat oven to 200c fan.
  • Bring a saucepane of salted water to the boil. Add the peeled and diced potatoes to the water and simmer for five minutes.
  • Drain the potatoes and pour onto a baking sheet. Dry off with kitchen towel. Spray with fry light and sprinkle over with the herbs. Bake for 10 minutes, turn them over and bake for another 10 minutes.

For the steak

  • Heat a griddle pan until hot. Add the fry light and cook the steak to your liking.

For the egg

  • Add the fry light to a cold frying pan, break the eggs into the pan keeping the yolk whole. Bring up to heat and cook until the white is firm but yolk is runny.
